Developing gastronomy is a challenging endeavour that requires intensive work and ongoing improvement. The involvement of knowledgeable experts in this field is essential for its advancement.
The Professional Study in Enogastronomy at the Faculty of Tourism and Rural Development in Požega is Croatia's pioneering programme in the biotechnical sciences, focused on enhancing the quality and safety of food and beverages, with a particular emphasis on the hospitality and tourism sectors.
By mastering fundamental biotechnical courses, students gain the ability to better understand and apply contemporary trends in nutrition. The acquired knowledge serves as a foundation for creating recipes that align with nutritional recommendations for diverse consumer groups. Practical training is a crucial component in the process of acquiring knowledge and skills for students. As such, emphasis is placed on the implementation of practical training, which is conducted in two ways:
- In laboratories and practical rooms at the faculty:
- Laboratory exercises are conducted in fundamental courses such as Food Chemistry, and Microbiology and Hygiene.
- Culinary practice sessions are held in courses such as Regional Croatian Cuisines, International Cuisine, Gastronomy I and II. Exercises and workshops are conducted by renowned Croatian chefs.
- Wine practice sessions for the courses Vine Regions of the World, and Viticulture and Winemaking of Croatia are held at the Faculty’s training provider, Vinum Academicum.
- In business entities from the private sector within the framework of the courses Professional Practice 1, 2, 3, and 4.
